APRON AND PANS - COCONUT RICE WITH SHRIMPS

Ingredients
4 cups of rice
10 cups of coconut milk
2 cups of chopped pepper
2 cups of fresh shrimps
2 pieces of chopped tomatoes
1 large bulb of chopped onions
2 pieces of chopped Tatashe (bell pepper)
2 cloves of chopped garlic
1 piece of ginger
2 cups of diced carrots
2 cups of peas
Salt to taste



Preparation
Pour the coconut milk into a clean pot and bring to boil.

Add the already washed rice, chopped pepper, tomatoes, onions, tatashe, garlic and ginger.

Stir the above mixture very well and allow to cook for at least 35 minutes.

Add the chopped shrimps, cover with a foil paper and allow to cook for another 10 minutes.

Once done you can serve with desired vegetables such as carrot, peas etc.
